What For Dinner 1/28 - 2/3

Last week dinner menu didn't go exactly as planned. So this week is pretty much last weeks recipes.



Monday-Grilled Cheese/Tomato Soup
FHE Treat-Brownies and Ice Cream



Tuesday-Cream Cheese Chicken/Rice/Corn



Wednesday-Pork Burritos/All the Yummy Fixings/Rice

Thursday-Leftovers



Friday-Fettuccine Alfredo/Garlic Bread



Saturday-OUT



Sunday-Super Bowl Food/Pizza, Finger Foods, Way to many calories will be eaten.



I will leave you with a recipe that I created this week. So easy and fast and super yummy.



My new best friend is Rotisserie Chicken. It is so fast to use for dinner. Have your hubby pick one up on the way home from work and this dinner will be ready in 20 minutes. I also used homemade tortillas from Bajio and their yummy spicy ranch. (Costco also has the homemade tortillas too.)



Pull off all chicken and shred. Then put into a sautee' pan and add 1 package taco seasoning and water according to the back of the package. Let simmer for 5 minutes. Then had two giant handfuls of cheddar or fiesta blend of cheese. (Don't skimp of the cheese) Then add 1 to 1 1/2 cup of sour cream, depending on how creamy you want it. Then cook up your tortillas and top with lettuce and pour over that yummy ranch. We also smeared the side of our tortillas with refried beans. Also when your at Bajio pick up some yummy rice too. You are probably asking yourself, Why not just eat at Bajio? Well this actually feed our family for 2+ nights and 1 lunch. It was cheaper to make this at home than go to Bajio just for the fact that we used it for more than one meal.



I thought that if you don't like the spice of the taco seasoning packet, substitue a can of crushed tomatoes and then add the cheese and sour cream. Probably would be pretty tasty. ENJOY.
